Peanut Noodles & Turkey Skewers

My friend Julie has a rule about not posting recipes if she hasn't tried them out herself.  That's a nice rule, but when you find a recipe that looks this good, I feel it's my responsibility to post it for everyone to see! 

Peanut Sauce:

1/2 cup smooth peanut butter

2 Tbsp lemon juice

2 Tbsp soy sauce

2 tsp chopped fresh ginger

2 cloves garlic, chopped

1 tsp sesame oil

1/2 tsp sugar

1/4 tsp red pepper flakes

Noodles & Turkey:

8 oz wide lo mein noodles

2 carrots, shredded

3 scallions, sliced

1 lb thin sliced turkey breast

  1. Heat broiler and spray a broiler pan with nonstick cooking spray.  Bring a large pot of water to a boil.

  2. Peanut Sauce:  In a small bowl, whisk together the peanut butter, 1/2 cup warm water, lemon juice, soy sauce, ginger, garlic, sesame oil, sugar, and red pepper flakes.  Set aside.

  3. Noodles & Turkey:  Cook noodles following package directions.  Rinse under cold water.  Toss with 1 cup of the peanut sauce, the shredded carrot, and scallion.

  4. Cut each turkey cutlet crossways into 6 pieces.  Thread onto 8 metal skewers.  Brush liberally with remaining peanut sauce.  Broil for 2 minutes.  Turn and broil for an additional 2 minutes.  Remove.

  5. Serve immediately with noodles.  Garnish with lemon circles, if desired.
