good morning muffins

1/2 cup brown sugar

1/4 cup butter

8 oz sour cream

2 eggs

1 cup shredded carrots

1/2 cup flaked coconut

1/2 cup raisins (or craisins)

1 1/2 cups flour

1 tsp soda

1 tsp cinnamon

*Combine sugar and butter.  Mix.  Add sour cream and eggs.  Mix.  Stir in carrots, coconut, and raisins. 

*In a separate bowl stir together flour, baking soda, and cinnamon.  Add to the wet mixture.

*Spoon into greased muffin pan (or use paper cups).

*Bake for 20-25 minutes @ 375.
