Margarita Chicken

~Marinate 4 boneless, skinless chicken breasts in: 2 Tbsp oil, 2 Tbsp lime juice, 2 tsp honey, & as much tequila as you feel is necessary.

~Roll chicken in crushed tortilla chips (about 1 cup crushed), place in baking dish.  Bake at 350 for 25 minutes (until chicken is done).

~Puree:  1 can Mexi-style stewed tomatoes and 2 Tbsp fresh cilantro.  Pour over chicken, top with 1/3 cup shredded Jack cheese.  Return to oven to melt cheese.

~Garnish with cilantro and limes.
