California Rice

This is a delicious (and easy!) side dish.  Throw some chicken on top and you're got yourself a meal!

2 eggs, beaten

1/4 cup oil

2 cups cooked white rice

2 cups shredded cheese (I prefer cheddar)

1/2 cup chopped fresh parsley

1/2 onion, chopped

1 clove garlic, minced

1 cup evaporated milk

salt & pepper

*Combine and pour into greased pan.  Cover and bake at 325 for 1 hour, until inserted knife comes out clean.
